Artisan, Gluten-Free Chocolates
As a child growing up in the Caribbean, Wendy-Dawn was immersed in an environment with its diverse ethnic culture. She created what she described as “an intoxicating carnival of the senses.” This particular sense of abundance, wonder and always following her grandmother around the kitchen was the fuel for her future creative endeavors .
After graduating from Hunter College and Fashion Institute of Technology in New York City, Wendy started a career as a visual stylist with Cartier on 5th Ave in Manhattan, and simultaneously pursued her hobby in pottery and clay design. Pottery gave her an opportunity to master the process of creating luxury products from the basics to perfection.
After exiting Cartier she moved into corporate America, spending over fifteen years working as a manager with major International clothing brands. During her years in the fashion business, she gradually grew her own list of wealthy clients (for personal and private shopping excursions.)
While on her quest searching for the magic formula “carnival of senses” that combines a refined palette, fashion, sophisticated texture and uniqueness, Wendy-Dawn found herself starting her own chocolate company, combining her artistic background with entrepreneurial skills.
Enter Truffolie
Being always keen to learn and improve her skills, Wendy took intensive courses in chocolate truffle and bonbon production. It felt compelling so she pursued further training at the French Culinary Institute and L’Ecole Vahlrona in New York City.
Since then, Wendy-Dawn has concentrated on creating her own original style of making chocolate. The intense process involves hand-rolling and a combination of ingredients that deliver purity and perfection in each bite. Her goal is to preserve all the health benefits of pure chocolate, along with a flavor that will be easy to remember and hard to resist.
